Tully Heard to create rooftop urban farm and eatery at Burwood Brickworks

Tully Heard, the team behind acre Eatery Camperdown, The Greens North Sydney and The Fernery Mosman has won the competitive tender to create Australia’s first shopping centre rooftop urban farm and eatery at Fraser Property’s Burwood Brickworks which will open in late 2019. Tully Heard will design, establish and operate the 2000-square-metre urban farm and restaurant precinct as an extension to its successful Sydney venture, acre Eatery which it launched in Camperdown in 2016.

“Our aim with acre Eatery has always been about changing how urban dwellers think about, experience and consume food. The opportunity to extend our concept into Melbourne and be a part of Burwood Brickworks, which is anticipated to be home to the world’s most sustainable retail development, makes this an exciting win for the Tully Heard team,” said John Tully, Director of Tully Heard.

acre Farm & Eatery Brickworks’ will be the heart of the Burwood Brickworks retail development, that aims to be the first retail development in the world to achieve full Living Building Challenge™ certification which includes targets such as the building generating more energy than it consumes. Visionary, disruptor and environmental activist Joost Bakker will act as creative consultant on the urban rooftop farm, helping the acre Farm & Eatery team to bring the unique concept to life with his experience in environmental design, closed loop hospitality, repurposing salvaged materials and healthy agricultural management.

“Tully Heard and their acre Farm & Eatery concept were chosen from a competitive field of respondents to the expressions of interest process. They have shown a commitment to delivering an impressive farm-to-table dining concept in Sydney and share the same passions that we’ve set out to achieve at Burwood Brickworks. We’re excited to have them on board,” says Frasers Property Australia Executive General Manager, Retail Peri Macdonald.

acre Farm & Eatery Brickworks will include a casual farm-to-table cafe and takeaway outlet as well as a farm-to-table full-service eatery. Head Chef at acre Eatery Camperdown, Gareth Howard will be actively involved in the menu development process. The food offering at acre Farm & Eatery Brickworks will have the same focus on seasonal homestyle cooking that has been a success in Sydney.

Fellow Director Luke Heard is passionate about understanding the impact of food on our environment and the importance of showing and sharing its journey.

“Alongside a sustainable food offering, we will provide a community hub for the Burwood Brickworks development through our hands-on experiences and events that will see visitors interact directly with the urban farm, allowing them to learn as well as connect with their neighbours,” said Luke Heard.

These experiences will include educational workshops on urban agriculture and sustainability, cooking classes, farm tours for people of all ages and interests, and interactive activities including hen houses, butterfly and flower gardens, bee hives, composting and worm stations, and demonstration gardens. A series of community and public events will also take place with market harvest, pickling and preserving days, produce swaps and market stalls.
