green magazine and V-ZUG invited Cam Hines from Southern Seagreens and chef Emily Salkheld to talk about and demonstrate the harvesting and cooking of seaweed at V-ZUG Studio Melbourne. Cam presented an engrossing overview of how three friends have grown a business on Victoria’s Mornington Peninsula to propagate golden kelp in Westernport Bay and harvest the invasive Wakame seaweed from Port Phillip Bay. Emily demonstrated how to use wakame in a range of dishes and as condiments in the V-ZUG Combi-Steam oven and state of the art induction cooktop with integrated extraction. A real treat.
